The Lion’s Mane is a member of the unusual teethed fungi, which form tooth-like structures instead of gills. The mature mushrooms look like pink tinted-white pom-poms. This is an aggressive species that spontaneously forms primordia on malt agar and sawdust substrates but may be slow to colonize grain spawn. The mushroom develops quickly once initiated and can form from a tiny primordia to a large, ready to harvest mushroom in one week or less.

Normally we stick to the tasty gourmet items, but the kids wanted to try something different.. THIS WAS DEFINITELY DIFFERENT! It was a lot of fun to watch as it grew larger and larger! Req’d for fun, but not for food!

I am a big fan of this species! I have purchased them from a local shroom vendor and then from the local Asian Market! I am loving the subtle crunchiness of the texture. The flavor is very mild and somewhat like clam in sweetness, I have eaten this variety after being dried, I love the texture of the dried mushroom as it is very similar to the potato chip! Nam nam nam! I crushed some dried lions mane into my mushroom soup and wow, was I treated to a robust mushroom flavor with it’s subtle sweetness I felt I was eating a mushroom ambrosia soup!
